We are a BUSY family. The older that our kids are getting, the more activities they are involved in. Do they HAVE to be involved in so much? No. They don't. What I have realized now is that the busier they are, the less trouble they get into and it allows them their social time and they are shown other ways to have fun and still be responsible. When we are knee deep in Lacrosse, soccer, tutoring, youth group, acting and Girl Scout meetings I am always looking for easy meals to cook and the best ways to manage my time doing it. Let's not forget those days when doctor and dentist appointments are thrown into the mix!
...and groceries..can we just take a moment of silence for the days when food was affordable??!! I mean, what happened to the Kroger 10 for 10?? Those days seem to be long gone so what I have created and will continue to create and share with ya'll is these easy family of 5 meals (can be families of however many) for under $25. If you have less people then that is even less for you! Once you hit the 5 mark you are buying double of most things..Trust!!
I love, love, LOVE this crockpot spaghetti and meatballs recipe below .. but first, let's talk about sauce. Far down on the bottom shelf of most grocery stores you will see the old school cans of Hunt's pasta sauce. A. It's cheap. B. It only has 6 grams of sugar which is less than just about any spaghetti sauce you will find unless you are making homeade. Most of the sauces that catch our eye and look all "fancy" have around 9 grams of sugar. Our weeknights do not allow for a lot of homeade sauces. Get this here.
Then, let's talk about meatballs. Oh, meatballs. Meatballs and I have a very personal and up and down relationship (I'll touch on that another day). You can add extra time to your cooking and make homeade meatballs or cook ground beef, OR you can do like my awesome husband did and grab some of these DELICIOUS Publix ready-to-cook meatballs! They were amazing...the great thing about this recipe is that everything just goes into the crockpot! I recommend only two hours cooking time on the noodles or they get really soft. Remember, you don't have to add seasonings if you are pressed for time. The sauce comes somewhat seasoned! Enjoy!
Faith n Joy Crockpot Spaghetti and Meatballs
2 Packs of Publix fresh meatballs (or frozen)
2 cans Hunt's spaghetti sauce (or two jars of your choice)
3 cups chicken broth
1/2 tsp dried basil
1/2 tsp dried oregano
dash of salt
dash of black pepper
1/4 tsp garlic powder
1 box Rotini noodles or spaghetti
Spray your crockpot with cooking spray. Add sauce and optional seasonings. Add noodles, stir and press down to make sure they are covered in liquid. Add those meatballs right there on top. Cover and cook on high for 3 hours.
This is perfect to throw in the crockpot before you head to practice Moms and Dads!
